Which arduino board would you suggest? Considering I’m just interested in keeping 8 footswitches and 1 expression pedal but adding USB MIDI Host support.

I only done it with an arduino uno and the hostboard but seems a bit too big. Maybe if you place it more in the middle.
an alternative might be the
teensy hostshield
But I only used the teensy as a midi device.
edit: or use the pro mini host shield

Yes, he said that has never tested is devices on linux (…). The initial problem was due to insufficient power. I solved using a powered usb hub.
