Headroom - 24, 32 or 64 float?

I like my music to be dynamic. I assume that the internal signal flow of the mod devices is in 32 bit float. Would it be technically possible to run it in 64 bit as well? Since the audio interface is 24 bit is it downsampled at the in out?

64bit audio processing is marketing snake oil used to sell software that cannot innovate further.
there are very few reasons to use 64bit for audio, like doing very precise filters or making music for bats.

typically outside of a plugin’s internals there is no reason to use more than 32bit.

to clarify on your first point.

That is correct. audio passed between plugins (the cable connections you see in the pedalboard) is 32bit float data. only at the very start and end of the chain, for the hardware, do conversions happen.
